My husband and I wanted to learn “cooking techniques” so we could leverage one dish…into many dishes. In addition, we wanted to focus on beef, pork, fish, and pasta.
Beef: We learned to sous vide different cuts of beef. We also learned to make various sauces including red wine pan jus, herb sauce, and butter herb sauce.
Pork: We learned how to cook “melt off the bone” spareribs and pork chops. This was highlighted by learning how to make risotto, as side dish. I have made risotto several times now…it’s a miracle!!!
Fish: Learning to cure fish to ensure it stays moist…
Pasta: OMG, homemade ricotta cheese!!! We learned to make pasta from scratch…plus the wine/shallot/chile sauce was simple and amazing. My husband and I enjoyed the fun, and informative lessons… plus we got to eat some fantastic meals at the end of the lesson… in the comfort of our own home! THANK YOU for the highlight!!!! "I celebrated my 65th birthday surrounded by 100 of my closest friends. We roasted a 107 pound pig on a spit. Alex was kind enough to accept the challenge of cutting this huge piece of meat up for our guests.
Alex did the following:
a) He always returned my calls
b) He made suggestion as to how to roast the pig and even offered to bring the sauce for the pig
c) He arrived on time to cut the pig. He made suggestions as to setting up the tables etc for the meal.
d) He cooperated with our guy to coordinate an issue free supper
e) He participated in the cleanup

We were very pleased with the service that Alex offered us in planning our daughter’s engagement party of 40 guests. It was easy to communicate with him during the planning stages and he made some good suggestions on adding and adjusting menu items. He responded quickly to emails and this helped to make the party planning very easy. I appreciated his pre-visit to check out the availability of space and prep area. The evening was a success, he prepared the food easily and efficiently, in our kitchen, and we really appreciated the server accompanying him. The appetizers and charcuterie board were visually appealing and flavourful. There was minimal food leftover indicating that everyone enjoyed the flavours and selections and we appreciated his calculations in preparing the right amount of food for our guests.

We had Alex provide chef services for a small dinner party to celebrate a friend’s birthday. The menu was quite extensive and I had a difficult time narrowing down my choices. Alex reviewed my selections and they did not disappoint! The ingredients were very fresh, portions were generous and presentation was lovely. I appreciated his organization as he arrived very well prepared and left the kitchen just as he had found it.
